Culinary trends and fads are fun. They keep things interesting. Instagram would close shop without them. But, as proud owners of a classic Parisian brasserie in the heart of downtown Montreal, we have a soft spot for those awesome dishes that not only refuse to die, but that seem to get more delicious and satisfying every time we return to them, like sharing a glass of Burgundy with old friends.

There is no better start to a French feast than a gargantuan seafood tower, featuring the best of Canadian waters.
The ultimate decadent indulgence. Messy, gooey, cheesy, and, oh, so deliciously comforting.
Whoever came up with the idea of sautéing mussels with wine, cream and herbs, and serving the whole thing with golden fries, was an unsung genius who deserves a statue on the Franco-Belgian border.
Slow-cooked duck leg, with fall-off-the-bone tender meat and crispy skin, is a French cultural contribution right up there with any Victor Hugo novel.
This emblematic dish transports us to La Côté d’Azur faster than the Concorde. The star is the tuna, which unfortunately, tends to come from a can. At Pois Penché, we said “non, monsieur, impossible!” We cook in-house a smooth tuna confit that elevates our Niçoise salad close to the gods who invented it.
